Spinach pesto
17 March 2021Spinach 50g | Pine nuts 25g | Salt 1g | Garlic 3g | Parmesan cheese 15g | Extra virgin olive oil 125ml
Blend all the ingredients together except the oil.
Add the oil little by little in a fine thread while we continue grinding the mixture so that everything is well integrated.
Observations:
-This recipe is for 250g of sauce.
-The spinach can be blanched slightly before making the pesto. This will preserve a fresher color.
-The garlic clove can be lightly browned before processing.
