Cod Fritters
20 January 2021Pinched unsalted cod 1kg | potatoes 2’5kg | egg white 0’5kg | pine nuts 50g | frying oil eq
Boil the potatoes and take it out of the heat, add the cod and live it to rest one hour.
Drain it and add the pine nuts.
Mix with the whisk.
Whisk the egg whites until they mount like meringue and add it to the mix carefully.
Make rough quenelles with spoon and freeze them on oven paper.
Fry them just before serving.
