Tartar sauce

Mayonnaise 250g | Mustard 2g | Chopped chives 3g | Fresh chopped onion 40g | Chopped capers 5g | Chopped pickles 5g | Grated hard-boiled egg 20g | Chopped parsley 4g


Cut the chives, capers, onion and pickles into very small brunoise and set aside.
Grate the egg and reserve.
Emulsify the yolks with the lemon juice + water + mustard.
Beat vigorously with whisk.
Incorporate the oil in a stream little by little, and integrate until obtaining a Mayonaise sauce.
Add chives, capers, pickles, chives and parsley.
Add the grated egg.
Keep cold.
Rectify the salt point.
