16 February 2021Egg yolk 1u | Lemon juice 10ml | 10ml water | Sunflower oil 500ml | Salt eq
Emulsify the yolk with the lemon juice, water and a pinch of salt.
Beat vigorously with the rods until the volume of the yolk triples.
Add the oil little by little until the mixture is blended.
