Minced poultry meat 1kg | Milk cream 100ml | Whites 150g | Salt 1g | Pepper 1g


Mix all the ingredients in thermomix in the following order: meat, egg whites, salt, and pepper. Lastly, the cream to prevent it from mounting with the shake.
Introduce the dough obtained in a pastry bag.
Drain small balls on parchment paper and freeze.
Place the quenefas directly from the freezer in boiling water and wait for them to swell.
Remove and reserve to serve in the consommé.
