Marinated tuna

800g red tuna | Ginger oil 400g | 400ml soy sauce | 80ml thick teriyaki sauce | Cherry tomato 200g | Tender onion stalk 100g | Basil lactonese 200g | 40g roasted sesame


Cut the tuna into cubes and marinate for 15 min. In the ginger and soybean oil. Drain and reserve.
Cut the tomato into quarters and reserve.
Cut thin slices of the stem of the chives and reserve.
Brush the plate with the teriyaki sauce and place 5 tuna tacos on top.
Put the tomato and a few points of lactonese between the tuna tacos.
Place the chive slices and the top of the tuna.
